- People- if you don’t have people within your restaurant that can help you grow, you have a problem. You can’t scale fast enough from just hiring outside talent. I work with my high performance restaurant clients to attract, develop, and retain great people. This combination of developing from within as well as recruiting rock stars is how my clients scale. To attract great people I focus on these practices.
- Become the employer of choice- You have to create a great culture where your people are thriving, growing, and making money.
- Always be looking for Rock Stars- If you only look for people when you desperately need them, you will hire bodies. If you are always looking for great people and making room for them, then you will proactively recruit.
- Hire Mindset over Skillset- While you want both, if you can only pick one, it is much easier to hire someone with the right attitude that can be trained on skillset then it is to hire someone with the skillset but isn’t possessing self management, care for others, or desire to be part of a team.
- Don’t skimp on training- Unless you want to continue to lose people and have to spend the money training someone new, just train the person correctly the first time. If they are set up for success, they will thrive and are unlikely to leave you.
- Processes- you can have great people but if they don’t have proven processes implemented to follow, you won’t be able to replicate and scale.

- Interviewing, hiring, and onboarding
- Training, scheduling, communicating
- Menu and beverage development and selection
- Product ordering, receiving, handling
- Prep, plating, and delivery
- Cleanliness, safety, sanitation
- Telephone, reservations, seating
- Hospitality, service
- Marketing, promotion
- invoicing, inventory, profit maximization
- Growth, Scaling
- 3. Product- One of the fastest ways to scale is to have a proven brand that executes at a high level. Product and brand not only includes food & beverage but also service, hospitality, ambiance, experience, and value. Create value by elevating the guest experience through quality product and a high level of service and hospitality rather than lowering prices by offering discounts.
- 4. Sales- They say sales cures all ails. While not entirely true, building a bigger pie helps cash flow. I work with my clients to help them build a stronger top line by maximizing product quality, service, and hospitality to drive higher guest counts and training to drive higher check averages. After we improve these areas we implement marketing initiatives to drive sales.
- 5. Profit- I work with clients to drive bottom line profits by focussing on $ profits not % profits. After all, we don’t take % to the bank. We take $. When we only look at percentages, we focus on cutting only. When we do that, we are shrinking our business. Consider this, if you had a product you produced and sold and you cut your production team and your sales force, how would it be possible to build sales? You would have less products to sell and less people to sell them. Cutting is the fastest way to shrink your sales there by shrinking your profit. If you focus on dollars, you will scale up and reinvest your profit to make more.
